Recipes: Under $20

If you were to look through my saved reels on Instagram, you’d quickly notice I love a good, simple vegan recipe. Double points if it takes under an hour to cook and prepare, and triple if it’s gluten-free! I know what you’re thinking, vegan and gluten free! What does she eat?! Let me tell you there’s a ton of food out there! That’s why I have provided 3 easy gluten free/vegan recipes below, all under $20 and all perfect for the summer!
Note: I did not make these recipes up. These recipes are from two different online blogs, but I have adapted them to my liking.
Remember when cooking, adapt flavors to your liking and omit things you know you won’t enjoy!
Chickpea Salad Recipe*
Ingredients
1 can (15 ounces) chickpeas drained and rinsed (or 1 ½ cups cooked chickpeas)
1 stalk celery diced
2 green onions sliced
½ cup halved grapes or quartered if they are large
2 tablespoons homemade vegan mayonaise or your favorite store-bought vegan mayo
1 tablespoons Dijon mustard
½ teaspoon dried dill
½ teaspoon poultry seasoning
dash of salt/pepper to taste
Instructions
Drain and rinse chickpeas
In a medium bowl, slightly mash the chickpeas with a potato masher or fork (feel free to leave some chickpeas whole for texture)
Chop your celery and green onions
Cut your grapes in halves or quarters
Add all ingredients to mashed ingredients and mix well.
Taste and adjust seasoning to your liking.
Refrigerate until ready to serve.
Enjoy this salad with crackers or as a sandwich!

Cowboy Caviar*
Prep time: 25 minutes
Serves: 8
Ingredients
Salad
3 Roma tomatoes seeds removed, diced
2 avocados diced
⅓ cup diced red onion
1 (15 ounce) can canned black beans rinsed and drained
1 (15 ounce) can canned black eyed peas rinsed and drained
1½ cups frozen corn kernels thawed
1 bell pepper diced, any color
1 jalapeño seeds removed, finely diced
⅓ cup chopped fresh cilantro
Dressing
⅓ cup olive oil
2 tablespoons fresh lime juice
2 tablespoons red wine vinegar
1 teaspoon granulated sugar or sweetener of your choice
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon garlic powder
Instructions
Combine tomatoes, avocado, onion, black beans, black eyed peas, corn, pepper, jalapeno pepper, and cilantro in a large bowl. Toss/stir well so that ingredients are well-combined.
In a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.
Pour dressing over other ingredients and stir/toss very well.
Serve on its own or with tortilla chips
