Recipe: Leftover Eggnog? Make Waffles!

I am old enough to remember when eggnog was homemade with actual raw eggs. The good old days! Today, commercial eggnog is easy to find around the holidays, and probably a lot safer to drink as well.
If you end up with leftover eggnog this holiday season, eggnog waffles are a great way to use it up and make a delicious breakfast.
This recipe contains no added oil because eggnog is high in fat itself. If you use a nonfat version of eggnog, you will want to add a quarter of a cup of melted butter or vegetable oil to make up for the lack of fat.

Eggnog Waffles
1½ cups eggnog
1 large egg
¼ cup packed brown sugar
1 teaspoon vanilla extract
2 cups white flour
1 tablespoon baking powder
1 teaspoon cinnamon
½ teaspoon nutmeg
Preheat the waffle iron and spray the baking surface with oil if needed.
In a medium bowl, mix eggnog, egg, brown sugar, and vanilla. In a separate bowl, mix flour, baking powder, salt, and spices. Add to the batter and stir just enough to combine.
Cook waffles according to your waffle iron directions. Makes about 4 medium-sized waffles. Enjoy!
